Below is how I tweaked the recipe. In the end it was a different salad but it still included the bacon, lettuce and tomato (along with a few extras.) The final product was delicious! I highly recommend giving it a try. And if you're a vegetarian, it would be just as great without the bacon.
1 Head butter lettuce, chopped (about 2.5 cups chopped)
1 Small head Red or Green leaf lettuce chopped (about 2.5 cups chopped)
1/2 Pint grape tomatoes, halved
1/2 Small red onion, chopped
1/2 seedless cucumber, quartered and sliced
1 cup sweet corn (I used canned)
1 Avocado, chopped
6 oz. blue cheese, crumbled
5 sliced bacon, fried & crumbled
Dressing: (you probably won't use it all)
2/3 C. Olive oil
1/3 C. Red wine vinigar
2 Tbsp. Water
1/2 packet good seasons italian dressing mix
In a large bowl, combine lettuces, cucumber, onion, avocado, corn, tomatoes. Crumble cheese and bacon. In a separate container combine olive oil, vinigar and seasoning. Pour dressing over salad to your liking and then divide evenly among 6-8 plates. Enjoy!
